Have you tried the 3090 in the Ryzen rig or the 3080 in the Intel? which is probably what I would try, to verify if it's the GPU / CPU combination that's got a problem, I must admit being sceptical about the Intel introducing effectively a two tier system of cores.

Nvidia Drivers is a one step installer.
Last thing I would install is Nvidia Experience which cause problems in some setups, it's not needed, just get the latest drivers from Nvidia, do not select Nvidia Experience and do the Custom install and select clean installation, it removes the old...
As it's happend on the original drive and it's replacement, to me it's looking more like a Hardware issue, have a look in event viewer may give some obvious clues as to where to look.

Most of those impossibly cheap supposedly high capacity drives are cheap / junk low capacity ones with the firmware hacked to indicate a higher capacity, all seems OK until you find out the drive won't actually take more than a few...
