Can i recommend alternative way, First one is for Windows 11 and Windows 10 , second one is for lower windows versions:

i removed paint completely doesnt worth the effort to edit xml... just removed it. i was already using photoshop anyways. also got rid of photos app too now using "qimgv"
I tested honeyview and assosiated bmp with it. there was no bmp on the menu. so i'm guessing u still have paint folder under windowsapps.. go there take ownership of paint folders (check deleted folder too) and remove it.
for fresh install of windows, you can edit AppxManifest.xml file on desktop and place it inside install.wim by opening it via 7zip. no permissions will be asked
There are no risk, it is not magic. it is codes they do what you tell them to do. You are not going to mess with windowsapps folder or with any other app. UWP apps don't mess with each other. they are apps just like in your phone. that is why they were invented. u won't cause problems in any...
why are u messing with all folder? i don't get it :) the only thing you are messing is one xml file :) there are ways to do without killing your system.
I will try to create a script where the version name is a wildcard. but as with every update of windows or modernapp itself. you may need to rerun the script. or add it to windows startup.
also to add .ps1 extension or any extension that can't be added u will need a uwp app to link to. like...

Can confirm, when notepad and paint is removed. you can remove .txt and .bmp from there. they are modern app UWP entries. just like new context menu they cannot be edited. you need to add/remove component to remove the entry. i think also shortcut can't be removed too. soo its .txt .bmp and also...
