Today I don't have any issues anymore, without any action from my part.
I suppose there was an update of Outlook.
Outlook Version and WebView2 Version are still the same though (1.2024.1002.100 and 129.0.2792.79 resp.).
I had the same issue today, also on my Dell work laptop. Windows 10 though.
The maximum was more than 8.5GB before I've killed it.
It seems to be stable at the moment.
Actions taken:
Ended task in Task Manager and restarted Outlook -> problem persists
Ended task in Task Manager, restarted...
