I've been on a Windows hiatus the past few months, doing my first deep dive into Linux. So all my external USB hard drives are formatted ext4. So I had to dig up a larger thumb drive and format it NTFS. Probably should format one of those drives as NTFS.

@Badger I've now tested the restore and it does work! My only hiccup was the network drive. The emergency disk doesn't have support for a network drive so far as I could tell. So I copied it to a larger thumb drive and did the restore.
