Thanks everyone, I've found a solution. For anyone how also has an MSI motherboard, maybe this is helpful.
MSI center allows you to create fan profile and switch between them. That's the solution I've found.
My bad, I probably wasn't clear.
Yes, I am NOT having temp issues.
And, NO, I didn't mean to be able to change fan speeds "only the fly". I just meant that I want the fans to be as quiet as possible when browsing - and that I don't care about noise when doing heavy work (i.e. video editing)...

Doesn't that show the heat, the 383K can be converted to celsius? This was the random shutdown while idle with no load, no program running.
In the MyASUS app, I see the CPU temp usually somewhere between 60-80C, while the often below 10% CPU load.
