Various app have this pitch black background, i've been looking online for a solution but i've found nothing, is there a way to have it be normal?

Setting>Personalization>Colors
There you can choose light or dark mode for both windows and apps.

Also be aware, if you have installed a theme from the store, the design of the theme will control whether you see things as dark or light.

So there is no option to disable what should be dark mode or not? Because I don't want my third party apps to have instead of a white background a pitch black one.

Some apps are hard coded to be light or dark, but very few. Most will follow whatever mode you have set up in settings.
Themes are also hard coded to be light or dark. Make sure whatever theme you choose to use is a light theme. (settings>personalization>themes)
Then play around with those 2 settings I referenced above. (settings>personalization>Colors>(windows mode/app mode)

Many apps, particularly browsers, also have an option in their own settings for light or dark mode. Browsers also follow what browser theme you choose to use.

The background on these apps were white though on Windows 10 and those are Third-Party apps I am talking about, is there really no way to change the generic background to just be white instead of just being black?

To the best of my ability I explained the settings within windows that controls the background color you see. It is a combination of both the theme you use and your mode settings. In some cases there are settings within the individual app. It does not depend on just one thing.
From that screenshot you posted it appears you may be using a dark theme. I would start there.Select a light theme. Then tweak the mode settings.
