Edge was updated to Version 107.0.1418.20 (Official build) beta (64-bit) and now when I search from the address bar the results are always returned from Bing. in my settings for the browser only has Google as a search engine and it is set to default.

Any suggestions as to why Edge is ignoring its own settings and over-riding them with Bing?

I'm not on the beta, but if this is true, then it is horrible news.

When I use an InPrivate session the correct Google search engine is used, when I use the release version of Edge then Google is also used - it is only this Beta build that has the issue.

I therefore uninstalled it to see if re-installing would fix it - nope still the same, in a normal session it ignores the search preferences and only uses Bing :(

I have the latest beta on another system as well, I am sorry but I don't have that issue.
I know it does not help to tell you, but it is not a forced setting otherwise we would all have it.
From my beta set up.

Why did it happen just after an update earlier today - was OK before the update, broken after the update.

Search engine choice should be at the OS level and touch all places where MS has hardcoded Bing.

Beta browser and Insider verison might have messed up some settings, like windows security, which "encourages" Bing as a security option. Pity you have already solved it, I waw wondering, if an extension forcing search engine would fix it, like:

I had actually switched off all the extensions to see if one of them was 'nagware' or similar, unfortunately that didn't make any difference. I also did a 100% scan with Malwarebytes to see if there was anything lurking around, again nothing ad finally Kaspersky failed to find anything unusual.

Most odd.

I also have ChrometanaPro installed but it doesn't change the search result from the Start Menu. If I use the search in Start Menu or Taskbar results are from Edge/Bing eventhough I set Google as default. I don't use Edge! I used to have Edge Deflector but found it disappeared when I did the WIN11 update. Now I will put Google in search to get to Google search from the Start Menu or use the pinned Google in the Taskbar. But sometimes I forget and end up in Edge/Bing search. LOL more history/cookies to clear!
