I searched for this and went through pages of results and only found one thread that seemed to be similar to my problem (kind of) but it was an old thread that no one gave a valid answer to.

I'm on the latest 11 Beta, I installed it originally with a local account but added my Microsoft Account shortly after (I still log into Local though). If I click on Accounts in Windows Settings, it shows my free 5GB OneDrive account and the perpetual Office 2021 that I bought. Yesterday I obtained a Microsoft 365 account but it's under a different email than my 'regular' Microsoft Account. I haven't installed Office from it yet since I had the above copy, but I reinstalled OneDrive (I had removed it years ago). I signed in with the Microsoft 365 account and got my 1TB and it asked if I wanted to log into my MA after, I thought it would somehow link them together so I said Yes... the OneDrive app freaked out, but I managed to be logged into both and now have two OneDrive icons in my systray. (A white cloud icon for the 5GB and a blue cloud icon for the 1TB).

So, here are my two main problems: (I think I may have solved Problem 1)

--EDIT--
The setting I hadn't noticed before mentioning it below did fix this problem, but I'm still curious about the Windows Settings part below.
--END EDIT--

I had to reboot my computer and noticed that neither OneDrive auto starts on Login.
Going to 'white cloud' -> Cog -> Settings, under "Sync and backup" there is no option to start with Windows.
'white cloud' version says "Build 24.007.0109.0001 (64 bit)"
Going to 'blue cloud' -> Cog -> Settings, under "Sync and backup" there is an option "Start OneDrive when I sign into Windows" and it's already turned on.
'blue cloud' version says "Build 24.007.0109.0001 (64 bit)" (That's the same version)

Even though both report the same version, there are noticeable differences in their settings.

Checking in Windows Settings -> Apps -> Startup I originally only saw one entry for "Microsoft OneDrive (64 bit) Setup" that is turned on. I just checked again and noticed a "Microsoft OneDrive" directly above it (didn't notice at first cause it's not the cloud icon and was a folder icon) that was turned off. So this honestly may have solved this problem for me. I'll reboot to check and edit this in a few minutes if fixed.

Problem 2: (More of an annoyance, wishful thinking?)
As stated above, in Windows Settings on the "Home Screen" it shows the usage of my 5GB OneDrive account and if I hit View Details it takes me to the Accounts page giving me a little more info on the 5GB account. What I want to know, is if it's possible and how to change that info so it shows the status of the 1TB account so I have an easier view of that one.

Thanks for taking the time to read this and if you have any insights/suggestions... I'm going to reboot now just to test if I fixed the autostart mentioned above and will comment either way to help others facing similar issues...

Not sure if this helps (maybe if a registry hack will work.

5GB <username>@gmail.com located “%UserProfile%\OneDrive”
1TB <username>@<domain>.onmicrosoft.com located “%UserProfile%\OneDrive - <company>”

Thinking about it more, I’d ideally want to disable the 5GB account and somehow set the 1TB to default if possible.

This is not an answer, just an opinion of how I would deal with it. The 2 different colored clouds indicates 2 versions of onedrive. The manila folder overlayed with a blue cloud is to an exe file located in
C:\Program Files\Microsoft OneDrive. I can not say for sure but I believe this version was installed as part of Office 2021. The blue cloud icon is the app installed with the OS.

With all the craziness people experience with Onedrive when trying to get things the way they want them when only ONE MS account is used, I would not mess with trying to manipulate multiple accounts and expect the result I wanted. I would simplify and protect my data as well as my sanity and start with a new clean user account.. Yes, you will have to spend some time setting this new account up like you want, but at least you will be safe than sorry.

I would first image my system as well as COPY my data to an external drive. Copying is the only way to prevent permission issues with your files.
Turn off backup syncing
https://www.elevenforum.com/t/turn-on-or-off-onedrive-folder-backup-syncing-across-windows-11-devices.4321/

Then unlink the pc from the 5 gb MS Onedrive account.
https://www.elevenforum.com/t/unlink-account-and-pc-from-onedrive-in-windows-11.15162/

MS themselves say NEVER have multiple versions of Office Installed so I would definitely completely get rid of 2021 before dealing with 365. Make sure the manila folder with cloud Overlay is gone. If not, uninstall it using Revo Uninstaller. This should leave only the MS Onedrive App installed

Create a new account with administrative privileges using the account associated with 365. Restart and login to this account.

Relink PC to Onedrive using this account. (you'll see 5 gb of alloted Onedrive space)

Install 365 using this account which will increase your onedrive alloted storage to 105 gb.
If your data is not still in this account (it shouldn't be), copy it from your external media. It will sync and upload into the 365 account.

Delete the old user account

You data will still be in Onedrive under the old 5gb account, but also duplicated in the new account. You can leave it there or go to Onedrive on the web, login with that account, and delete it if you want to use that 5gb space for something else. You can always sign in to onedrive on the web and put any "special data" into the old 5gb account if you want. You CANNOT move that 5 gb of allocated space to the other MS account as that account gets its own 5 gb of free space as well as the 100 gb you get with 365.

Very detailed and useful as always. Thankfully, I hadn't used my 'old' OneDrive cause I had more Dropbox storage so I had most things set up to use that. On my laptop (the system we've been talking about this entire time) is the purchased Office 2021 which I'm going to keep for now. I just opened Word going to select my name in the upper right, it shows I'm signed in with my MA and has my 365 account listed below that. I clicked User Info, under Services I did "Add Service" -> Storage -> OneDrive and went to manually login and it complained about the account. I tried again and used OneDrive for Business and that added the account properly. (I think it somehow attached my copy of Office as a purchase for my company... which I don't know if it's a good or bad thing?)
Just pointing it out (it's not important) but adding the 1TB OneDrive also added a SharePoint service to Office as well.

I'm going to move all the files worth keeping from the 5GB to the 1TB and delete the rest of the junk to clean out as much as possible. Then I'll write a script that takes the important stuff in Dropbox and copies them to the 1TB OD weekly (maybe nightly).
I don't want to deal with the hassle of creating a new user account and that whole headache, so I think this is good for now. But doing it the way you mentioned I assume would solve the "Windows Settings" showing the proper account info, but I can live with that.

Thanks again @glasskuter, I'll mark this solved since I guess the Windows Settings probably won't work without the new Windows account.
