It asks me if i want to enroll with a button to get started. I contimually get security updates. I was in the insider Program at one point and opted out and took whatever steps there were to do that.
That explains it, I presume you opted to stop receiving Insider builds back in December 2024. Opting out stopped you getting any more Insider updates, but it did not switch you the the release channel 26100 build. You are stuck in limbo now, still on the Beta build but not receiving any more updates for it, and not getting the release 24H2 updates because they're not appropriate for your system.
The general advice from Microsoft is that to leave Insiders you need to do a clean install. That's not quite true for the Beta build, there are several ways to go back to the retail build.
Beta 26120 and the retail 24H2 26100 builds share a common set of system files, the Beta features are turned on by a small Enablement Package. This can be uninstalled, returning it to a 26100 build. Windows Update should then find and install the Release Channel updates for 24H2, including the KB5062553 Patch Tuesday update.
The other way to go back to 26100 is more thorough, but should ensure you have no hidden 'leftovers' from being an Insider. Because they share a common set of system files you can do an in-place repair upgrade on your 26120 using the standard 26100 24H2 ISO from Microsoft, keeping all your files and installed apps. Option One, repair using Windows Update, you tried earlier in post #3 but it downloaded the repair version for your 26120. You may be able to get the repair version for 26100 if you first uninstall the Beta enablement package.
