Start Meuu, Default Apps (ie Groove Music, Weather etc)

Is there any way to rename the default Windows apps, or change the icon on the Start Menu?

Does this not work?

I wouldn't be surprised if it is impossible to do what you are looking for with a Windows application.

Or create a shortcut to the app and you can rename and change the icon

It's the default Windows Apps, they don't have shortcuts like the normal win32 apps
