Why is Win 11 so difficult to use manipulating files?

My main PC is dual-boot Ubuntu 22.04 (Unity 7.6) and Win 11 Pro with Microsoft 365 (Windows 11 Pro Insider Preview, 22H2). Only reason I use the latter (as well as Win 10 Pro) is some of my clients have requirements for software that doesn't run on Linux. With Win, especially 11, everything I want to do moving, copying, creating files seems to be opposed by Win 11. For example, my data files are in exFAT partitions. My image and audio files go with reports, etc., in the exFAT partition and not under any folder in the Windows partition. How do I keep Win from putting image and audio files, for example, under Users? How do I keep things from being put in Creative Cloud and other places that I do not want.

Also, under File Explorer, why do all the commands I use go under "Show More Options"?

I really don't understand the question. No version of Windows I've used has ever "put" files where I don't want them. Every version of Windows has always allowed one to save a file anywhere you wanted. Windows 11 is no different in that regard as far as I can tell.

There may be default save locations for the lazy but those can always be overridden.

To get rid of Show More options and revert to the original list see here Disable "Show more options" context menu in Windows 11 Tutorial

To stop One Drive doing anything I disable it in Startup.

Audio files and images go where I tell them to using Save as, I don't use any Microsoft folders or the C: drive for data unless it's a program that refuses to put things anywhere else.

You can move folders like documents elsewhere. Move or Restore Default Location of Documents Folder in Windows 11 Tutorial
