This worked for me. The folders now expand to the open folder (like you think it would by only selecting Expand to open folder) but by also clicking Show all folders, it seems to behave like it used to.
One interesting note. For me, before I implemented 'Show all folders', my One Drive folders...

I didn't mean to imply I'm logged in as an Admin in an office situation. It's my PC and I'm logged in under the user account I created when I installed Windows 11 which I assume puts my account in the admin group.
