I built a new pc but i think i could have done better with my chose of parts. Thinking about returning and upgrading some stuff. What do you think where i went wrong. I was thinking better video card & maybe better memory. Here is most what i got/built.

I think you're a few weeks late for bargains on better graphics boards, prices are starting to rocket up if you want more memory on the board.

You can probably find a new RTX 3080 in the $500-$600 range, which is good enough for most AAA games on ultra settings at 1080p.

    I'm a computer enthusiast so have quite a few systems that I run. More like an advanced hobby.
Stretch your budget if you want better performance. Consider to get the Asus Prime GeForce RTX 5070 Ti 16GB GDDR7 and upgrade the f@cker. In addition to what @Topgundcp wrote above, I think if you can afford 64GB Corsair RAM and serious ROG stuff from Asus, the PC is practically begging you to move from that Core Ultra 7 265K to the Core Ultra 9 285K. (Just sayin' out loud what others are thinking.)

I also have the very same Asus MB and your choice in using the Asus Maximus Z890 Hero MB is an excellent. Short of your video card I am not a gamer but use my pc exclusively for tax reporting, online purchases, banking and minor web surfing hence the Intel 265K's built in GPU meets all my needs. My build still set me back over a grand however I was able to repurpose my 25 year old Cooler Master HAF full towner. This was also my first time using a AIO water CPU cooler instead of the heavy heatsink/fan cpu cooler and the lack of noise impressed me the most. I do know I must budget every 5 years or so to replace the AIO since they are not maintance free and eventually fail which is why monitoring both cpu and and NVMe drives is imperative. No household can exist w/o at least 1 pc at home which is why I completed 2 new desktop builds prior to tax season. I would have never done this had Microsoft ceased support for Windows 10 making it mandatory for my upgrades prior to tax season. Don't be suprised if banks and all financial institutions in 2026 dis-allow logging in on a Windows 10 platform due to Microsoft's unpopular decision to end-of-life Windows 10. Enjoy your new build .... I' enjoying mine and am amazed how the tech has changed since my last build in 2008

Unless you spend 10's of £K there's always going to be something better out there, I'd not complain if i had that kit myself.

I ended getting a video card

ASUS TUF Gaming GeForce RTX ™ 5070 12GB GDDR7 OC Edition Gaming Graphics Card (PCIe® 5.0, HDMI®/DP 2.1, 3.125-slot, and a monitor samsung Odyssey neo G7 43 inch. But now I cant get my monitor to recognize my video card. So I cant install windows or do anything. I tried to use hdmi cable & the DP cable. The monitor works with my old PC so its not the monitor. Do not know what to do at this point. any help.

Not bad, many of us that build them (personal PC's) don't use water cooling. Just no need for us. Air works fine. Video card will be a weak point, but depends what you want out of it! Great backup video card too! Ti version is the way to go with 16GB ram. But good brand!
