Windows 11 wont allow you to remove the time from the lock screen, nor will it allow you to customize it.
You'll need to search for a 3rd party app, if there even is one.
The only options that I am aware of for the clock is the regional format settings.
Settings>Time & Language>Language & Region
Click "Regional Format"
Adjust as required.
