I have a client on Windows 11 who reports that Chrome keeps deleting itself. Has anyone else dealt with this issue? If so, how?

No, I've never seen it. I would have to see that for myself in order to believe it. I would come more believing maybe the ICON was disappearing. The folks I deal with are somewhat technology stunted and have a problem in terminology when trying to describe an issue over the phone. It's like pulling teeth when I ask them to describe a problem.

I checked on his system, and Chrome is not listed in Settings → Apps → Installed Apps, anymore. He used it last on Wednesday before Thanksgiving (five days ago), and today is my client’s first day back to work. It deleted itself.

There are a few reports out there about this problem, but the solutions are inconclusive:

Is it a managed system (You mentioned work) If so then IT may not like it being on there.

I would first run SFC to make sure there is no corruption in Windows. I would also check for Malware with Malwarebytes.

I think there's something with his Chrome installation that is preventing Chrome from installing the new files when Chrome updates. Here's the way I would troubleshoot it. It will take a "wait and see" approach.
1. If he is syncing his Chrome data, turn off sync for that device.
2. Save his bookmarks. Completely uninstall Chrome using Revo Uninstaller Free. Make sure to delete all residual files and registry entries that Revo finds.
3. Restart and reinstall Chrome and his backed up bookmarks. Do not install any extensions at this time nor sync Chrome data.

If Chrome stays put through the next Chrome update, you know that either he had a problem extension OR the problem was in the syncing with his other devices.
If Chrome uninstalls again, turn off Chrome updates to see if it stays put.

Yes, I have a similar situation, however, mine is that Google Chrome (along with all my opened tabs) disappears from my screen along with being 'unpinned' from my task bar.

For the taskbar issue, do you have an overflow ? Click the 3 dots at far right of taskbar if there is an overflow.
