Is there any way to control windows 11 update while in ethernet connection?

During installation, make sure that you do not have an Ethernet connection (unplug the cable). For WiFi, simply don't configure it during setup.

Then, when setup is done, disable updates and then you can re-enable Ethernet or WiFi.
