I am a lazy cook. I try to come up with interesting meals that require little work, few ingredients and very few dishes to wash.


Today's delicacy is Chicken Alfredo de Onion.

Ingredients.

1. 1 lb. Hand pulled rotisseri chicken pre-cooked
2. French fried onions
3. RAGU classic alfredo sauce

Total cost: $13.82 (makes three meals for me and 4 meals for normal people)

Directions...

1. In a 4 cup Tupperware bowl, break up about 1/3 of the rotisserie chicken into small pieces.
2. Sprinkle about 1/3 of the French fried onions on top.
3. Pour on about 1/3 cup of Alfredo sauce.
4. Cover with paper plate and microwave on high for 2 minutes.
5. Remove from microwave and stir with fork till completely mixed.
6. Enjoy. :-)


Cleanup... one bowl and one fork.

Chicken Things.

Ingredients...

1. 1 lb. Hand pulled rotisseri chicken pre-cooked
2. 2x Pillsbury Crescent rolls
3. 8oz. Philadelphia Cream Cheese
4. Italian Seasoning

Directions...

* Pre-heat the oven to 350 degrees *
1. Put all the chicken and the Philly cream cheese in an 8 cup bowl.
2. Sprinkle 3 heaping tablespoons of Italian seasoning on top.
3. Mix with your hands until well mixed. Then set aside.
4. Take a large 10" x 15" baking sheet and coat lightly with "spray" Canola Oil, then set aside.
5. Place about 2 ft. of wax paper on counter top.
6. Open the Crescent rolls, and unroll the triangles. To make 4 large squares from the 8 triangles. Place these on the wax paper.

7. Do the same for the other tube of Crescent rolls.
8. Take the mixture from step #3 and divide into 8 blobs and place these in the center of the "8" Crescent roll squares.
9. Tie the 4 corners of each of the 8 squares into 8 pouches with a chicken mixture blob inside each one.

This, eight times...

10. Inspect the 8 tied up Crescent roll squares with chicken mixture inside. Pinch closed any holes you see. (top & Bottom)
11. Transfer the 8 tied up "Chicken Things" from the wax paper to the baking sheet. Spread them out evenly.
12. Put the baking sheet with 8 Chicken Things on lower rack of oven, and bake following the Crescent Roll baking directions.

When finished baking, place the baking sheet on the stovetop to cool a bit.
Enjoy. :-)


You eat the Chicken Things with your hand. Warm or cold.
Hungry man = 2 Chicken Things.
Normal appetite = 1 Chicken Thing.
You can store them in the fridge (in ziplock bags), for up to 3 days.
To reheat, microwave one Chicken Thing upside down, on a paper plate, for 1.5 minutes.



Cleanup... one baking sheet and one bowl.

Here is the recipe for Mom's Meat Crust Potato Pie

Crust

1/3 cup Tomato Sauce
1/2 cup Bread Crumbs
1 lb Ground Beef (I usually get 80/20 as it makes for moister burgers)
1/2 Cup Chopped Onion (Optional)
1 tsp Salt
1/8 tsp Black Pepper

"Filling"

6-8 of your favorite mashing taters, I prefer Idaho Russet Potatoes
Butter to taste
Milk to consistancy. I am a completely smooth mashers guy, I mash em until there are zero lumps. Stiff is better as a filling than too loose

Mix the Crust ingredients together in a bowl. Pat it into the bottom and sides of a 9" pie tin or glass pie plate. Make your mashed potatoes...I am assuming everyone knows how to make mashed potatoes. As I say stiffer is better for the "filling"

Heap the potatoes into the Meat crust. Pile them ridiculously high is preferred. Bake in a oven pre-heated to 350° for 30 minutes. Put a baking sheet under the pie as the 80/20 tends to make it overflow some when cooking

Pull it out at 30 minutes, let sit a bit to settle and slice it in wedges like pie, size depends on how many servings, other side dishes, etc.

That's it. Now others like lots of "extras" in their food, so feel free to personalize. Put some cheese in the mashers, or sour cream and chives, etc. Maybe you prefer garlic mashed potatoes. The crust can take additions too, some like to add black beans, or corn, or (heaven forbid!) vegetables. I can only vouch for my simple meat and potatoes version which is a simple as it gets

If you have a crock pot

I make this for 5 servings

5 - Boneless, Skinless Chicken Breasts
1 - 24oz Jar Pace Medium Picante sauce (use your favorite salsa)
1 - 15.25 Oz Can Corn (Plain, any variety)
1 - 15 Oz Can Bush's Black Beans
1 - 8 Oz brick Philadelphia Original Cream Cheese

Cut the chicken into small bites, mix it with the Picante Sauce, the canned corn and it's liquid, rinse the black beans as they will be gritty otherwise, and add to the mix
Put the whole mix in a slow cooker and cook on low for 2.5 hours
Stir the contents and add the Cream Cheese and incorporate into the mix. Stir until smooth and completely mixed
I serve it over mashed potatoes, but over rice is good too

It's easy to pull together and cook, and it does well reheated from fridge

Here's another:

I have always loved the stuffing from inside a turkey like at Thanksgiving or Christmas, etc. Outside the bird, things like Stovetop are OK, but lack the flavor and moisture. This recipe has great tasting stuffing, with a rich, moist taste. You can also make it alone and double or triple the recipe if you want extra, are bringing it for pot luck, etc.

I make this for 3 meals
3 - Boneless, Skinless Chicken Breasts
1 - 6oz box of Stuffing Mix (Stovetop is good, but I actually prefer Safeway's Chicken Flavor https://www.safeway.com/shop/product-details.126350013.html )
1/2 Cup Sour Cream
1 Can Campbells Cream Of Chicken Soup
1 Can of Water

Put the Chicken Breasts side by side in a slow cooker
Mix the soup, water and sour cream in a bowl, whisking until smooth
Add the box of stuffing mix and incorporate until all the dry ingredients are moist
Pour the mixture over the chicken breasts covering them completely
Cook on low for 2 to 2 1/2 hours depending on breast thickness
Remove the Chicken breasts, fluff up and mix the stuffing and serve
I generally salt the chicken breasts before eating, but refrain from salting them before cooking

The breasts come out moist, the flavor is just chicken and the stuffing is on par with that from the bird innards :D
