I went into MSConfig and checked the startup things in Windows 11.

I found some with high impact on Startup but don't know what they do, so not sure whether to disable or not:

sapisvr - don't know what it does

brdiagtool - don't know what it does

Surfshark is my VPN - so I won't disable it at Startup because I might not remember to turn it on when I boot in the morning.

Same with Skype - need to remember to turn it on.

OneDrive - I'd like to disable it at startup, but I'm a bit ambivalent.

Anyone have any good advice for me?

    Still assembled, still runs. Haven't turned it on for 13 years?
A better way to control your start up Apps, is to use Local services,
you can reset them via policies >> options> Startup type >>> Manual
I have Skype/Onedrive like you but i dont use them every session.
The manual setting just fires them up when you hit the icon, i tend to have all the non OS "Extra's" set to it
