I can install all variants of 26H1, (x64 UUP dump all versions ISO) without problems.
But selecting "IoT Enterprise" I can neither create an offline account nor does it install as "IoT Enteprise", but as Windows 11 SE Insider Preview with a watermark.
What might I be missing here?
