I hope you understand Windows OS relies on Edge for certain system tasks, and uninstalling it increases future issues drastically. Plus you may have updates fail because of it, or at the least a future update will reinstall it. If you don't use it, just don't use it, but you shouldn't...
What version of Edge are you on? It should be fixed in the current version "Version 98.0.1108.56 (Official build) (64-bit)".

I think what you have would be fine. Here's what mine show that have been working for me. I think you can't go wrong with it on Balanced if you don't tax your system. I don't think I ever changed it to high performance, and never noticed needing it, so I'd keep balanced if you don't notice...
No worries. Also I forgot to mention my power plan is system defaulted to Balanced, so whatever Windows decided to use for all the settings within balanced, it's been working great for me.
