I was able to resolve the problem by using the Windows 11 Disk Image (ISO) for x64 devices download, instead of the Create Windows 11 Installation Media download. The Media Creation Tool gives you the Install.esd, while the Disk image ISO gives you the install.wim. I guess the .WIM is better...
