Well I am sure UUPDump will have 26H2 when it is available. Even if MS won't update 26H1 I can get it from there if I want it. I still can't keep Task Manager from starting with Windows. Only problem I am having.

I am running Windows 11 in VMware and have noticed the same thing. Everytime I boot up Windows 11 I have to manually start Defender. I don't have any other antivirus or malware software installed as Win 11 is a new stock install from UUP Dump.
