When I open File Explorer, it looks like this:

You need to completely disable Quick Access.
That's what I did and mine looks like this...

Note: I have the "View" set to Details rather than icons.

In Options (under 3 dot menu), I don't use these (RED boxes) but you may want to...
I just want to see my drives. When I single click them (left side), I see their folders (right side).

There is an amazing little program someone made called WinSetView. I got the recommendatyion OFF this site by someone. You can remove quick access altogether and set ALL kinds of things for File explorer. Like I like to have my file explorer open to my Downloads folder when I open it. And you can do that with that nifty little program. Heres a link for those looking to do similar.
