How to remove unwanted default Windows Explorer folders and customise it to my requirements

Windows Explorer lists drives and folders according to some internal system. I have found how to deal with some things but I can't see how to remove folders such as Music, Pictures, Video which I never use. The simple and obvious Delete doesn't appear as an option.
How can I remove these and tidy up Explorer side bar to my liking?
