So I gave up on Workstation Pro 16 and went with Hyper V but he default switch is missing in the initial set up? Tried completely turning off Hyper V in 'turn windows features on and off' and turned it back on again but no luck, Any ideas?

Can you see the default switch from Virtual Switch Manager?

What version /edition of Windows 10 are you running as older versions (quite a long time ago) did not have default switches?

I can see that under create virtual switch but if I create one that way it completely f*%k@ up the network on the host machine, the only way to restore the host is to via a Macrium back up. The default switch on initial set up is missing. I am running Windows 11 beta but wanted to stick dev flights on a VM

Got it in the end, had to go back a week from a macrium image, Hyper V default switch was present. I've no idea what I did but all's well that end's well.
Still no idea why Workstation Pro wouldn't work
