In my notifications I read:
Updates are available
Required updates need to be downloaded
Your organization manages your updates

Does that mean I don't need to worry about anything and can safely ignore updates because some organization is managing them?

Your organization manages your updates
Any software that changes registry values that manage settings on your PC will cause such notifications.
In my PC I have O&O Shutup and that's why in some settings I can see this: "This setting is managed by your organisation'".

Does that mean I don't need to worry about anything and can safely ignore updates because some organization is managing them?
No it does not mean that. If you want to stay safe you should update your computer on a regular basis.
Only if your computer indeed belongs to the company where you are working, then yes they should care about updates. You could then easily ask them what to do.
