Is it possible to change the OSD that shows when you change volume via keyboard?

I don't know the exact term for it but my kb has play/pause, rewind, fast-forward, mute buttons as well as a roller for volume control. On windows 10 it was a very pleasing visual but on windows 11 it's a bit lacklustre.

Is there any way to change this?

I think you are asking about the volume flyout that appears when you select a multimedia key. You might be able to customise it with third party software, for example try this from the Microsoft Store:

Just FYI, I have a Logitech K350 wireless keyboard which I used on Windows 10 and 11, and the volume control visual(s) are exactly the same for Windows 11 as it was for Windows 10.

That's interesting. I'm using a Logitech kb also - G915 TKL Lightspeed.
