Is there a way to save text files as one file rather than a file with tabs

Windows 11 Pro version 22H2 build 22621.3155
I've noticed since I have been using Win 11 Pro that when I create a text file or a few and then open the text file all 3 of the recent ones show as tabs like a browser. Is there a way to make text files work the same as in Win 10?

It appears you are using the new Notepad which now has Tabs. I usually close each tab before closing Notepad itself. From the Settings gear:
