Windows update installing drivers despite them already being installed

Has anyone ever figured why is this happening and how can it be worked around?
It's piddling me off to no end - I'd install latest AMD driver only to be overwritten by whatever from Windows Update. I don't want to disable that part of WU though because this is not my PC and at some point something might need to be downloaded from WU, like an older printer driver or whatever.

I've disabled driver updates because my PCs are old, the drivers they've work and there is no real benefit to updating them.

You can disable that part of Windows Update.
It will still download the drivers, but will make it "optional" to install them.

    Still assembled, still runs. Haven't turned it on for 15 years?
We've had a problem with Windows Update over writing an Intel Graphics driver on HP touch screen laptops causing the screen to flicker. I blocked the driver using the WUMT, the Windows Update Mini Tool.

Windows update tends to grab your latest PC manufacturer driver from the mfg site for your machine even if you update to a later driver from another company. A little MS app called wushowhide.diagcab would allow you to block and hide specific WU and drivers but it's no longer supported by MS and hard to find now. Far as I know it still works though if you can find it.

That's not true, the drivers come from Windows Update catalog.

Vendors are responsible for submitting driver updates to the Microsoft Update Catalog. The process can be slow, and so many updates tend to be skipped entirely. And smaller vendors don't want to spend the time doing a full driver certification.

Find the hardware in Device Manager, right-click it, select "Update driver", then click "Browse my computer for drivers", then "Let me pick from a list of available drivers on my computer". If more than one driver is shown, select one that is not highlighted and click "Next". You may have to restart the computer for the change to take effect. Be sure not to click "Search automatically for drivers".
