If you're using Defender, open Settings -> Privacy & security -> Windows Security -> Virus & threat protection -> Virus & threat protection settings -> Manage settings -> Real-time protection -> OFF

If you're using a 3rd-party AV, you'll have too look up the Real-time protection setting.
