I have Windows update set up normally (out of the box) and it has never updated my GPU drivers. I have to actually go to Advanced Options -> Optional Updates to update any drivers.

Not sure how people get drivers forced on them, but it has never happened to me.

I build my machines ,update the BIOS, get chipset drivers usually from AMD directly, let Windows update run . Fix anything that is still showing a yellow exclamation point. Then, I update my Nvidia drivers about once per month, everything else I leave alone unless it's broken.

If you have some level of knowledge then letting the Windows to update the software is good option. However, if you don't know much about drivers then downloading third party tool called Driver Easy is great option. In my case I am using this tool and when ever I feel that something is wrong I simply restore the previous version using the backup feature that driver Easy has.

I use it for the simple reason that it sames me time. MS has a hard time with the OS, I would not want them to download any driver that came from some other source.
