1) download the script from UUPdump for the w11 workstation by including extra additions to Windows 11 pro -- for example here's the canary insider build for W11 including pro for workstations. This will create an ISO. Scroll down the list and choose the edition you want.

2) In either case use Rufus to create a bootable USB device from your created ISO - either run as Is for the standard install version or run with the bypass options to create an install device bypassing restrictions.

3) Not sure when it was released but it's been out for quite a while -- unless you've got a mega powerful PC there's no real reason for using W11 for workstations -- allows more processor cores and physical processors otherwise not much in it compared to W11 pro -.

At install time when you boot your usb device you will be presented with an option to install f W11 pro or W11 pro for workstations assuming you just selected to create the iso for W11 pro and W11 pro for workstations and unchecked the other boxes.
