Windows 10 does not allow you to customize the Quick Access folder icon using the GUI, but you can do it with a simple Registry tweak. Here is how to change it.
Unfortunately, it is not possible to change the folder icons of the quick access this way.
The only easy way to change them is to unpin them and to pin you customized folders (as discussed here and there), but it may also change the arrangement in your File Explorer.
There's a way to change the desktop icons, independently.
If you really want a proper theme change, you'll need to patch your new icons with a special software (for example SecureUxTheme patcher, maybe you could with Winaero Tweaker).
I personally change them manually, but I guess it would be a bit of a hassle for you.
