How to obtain activity history for App and Files accessed for Windows 11 22H2 / 23H2?

Hi guys,

Is there a way to obtain the activity history for applications and files accessed on Windows 11 23H2 & 22H2? I know the activity history was deprecated for Windows 11 at the start of the year but wondered if someone has found a work around to piece together a timeline of the different applications and files accessed on a device?

If I were to look at piecing this together myself, where should I start in terms of locating this information?
