EDIT
I am adding a note because several people have misunderstood a key point. I am trying to show how to rename pinned folders that are located on your drives. I am NOT trying to show how to rename items GROUPED together on the Start screen. For example, what you see in the first screenshot is 3 folders located on the drive. These are NOT groups within Start.
END OF EDIT
I just came up with a cool trick to rename links to folders in Start. If any of you know about this already, my apologies, but this was entirely new to me and makes a world of difference.
First, let me note that I have some odd names for folders. There is a reason and logic for this that I won't go into here. So, if I pin a number of folders to start, it looks like this:
NOTE: I've removed everything to keep this uncluttered for this demo. I also don't go into detail on every step. For example, when I say to create a shortcut I assume that you know how to do that. If you need me to expand upon anything, let me know.

If you right-click one of those folders, you will note that there is no option to rename them.

So, here is the trick:
Create shortcuts for those folders on your desktop or anywhere else if you prefer. It doesn't matter and these will be temporary as we will delete them momentarily.
Now, rather than pin the original folders to Start, simply pin the shortcuts and you end up with this:

Finally, delete the shortcuts. The pins in Start remain and function exactly as you expect.
If you want, you can even group your pins to get this:

NOTE: I tested this on the new Start and it works there as well.
