Just upgraded this am to 11 pro on a PC which wont pass for 3 things, UEFI, CPU and TPM

Windows 11 are exactly like Windows 10 64-bit with a new look. If a driver or game or application works in Windows 10 64-bit, it also works in Windows 11 with very rare exceptions. I have seen a couple of old games that would not work properly in fullscreen mode. The fix is to right-click on the shortcut, select Properties, Compatibility and check the Disable fullscreen optimization box. And of course it's best to run any setup as Administrator to avoid issues due to access rights.

If you look back through the threads, you'll see some of us have it running on legacy netbooks with legacy bios :) I used the rufus method - burns the iso to usb while removing the requirements for TPM, secure boot etc.

I am very pleased when I found out the upgrade to 11 worked.
I thought this PC was at the end of the line.

I have a notebook PC which is compatible, but have not upgraded yet.
I have several more desktops, and another real old laptop running 10. One I use with WMC and windows 10, and not going to risk that one.
Long ago learned that the app you use all the time is more important than upgrading the OS.

I do have a SFF Dell which I upgraded the video card, put in an SSD and upgraded the CPU, it still wont meet but it runs win 10 good. And I might upgrade it soon to 11.

All other PC, I dont plan to yet do anything, keep them on 10.

I installed Windows 11 on my test pc on Nov 26, 2021. It's been running great. I used the same method/video as you did. I posted the youtube link on one of the threads that was active here at that time on 'incompatible hardware.' It's also a legacy pc (see My Computer). It's processed all the updates very easily.

p.s. I'm looking forward to seeing how it handles the 'feature update' that they say is coming out in July when Win 11 is 1 year old. See link.

Copied all files to folder on desktop.
In sources folder, deleted appraiserres.dll

Ran the setup, told it NOT to check for updates.
It is all working so far.

I clean installed Windows 11 on my 14" Lenovo Ideapad Flex 4 that doesn't qualify either. I used Rufus 3.17 normally without any special stuff.

Shut down the computer, plugged in the flash drive created via Rufus, rebooted from the flash drive and installed Windows 11.

I let it check for updates, but still had to update with Windows Update, which worked just fine.

Several someones here claimed Windows 11 would install on any computer without anything special happening. I guess they were right, because I've clean installed countless operating systems/updates exactly the same way I did it last night.
