My main Notebook has a Section I've named QuickNotes.
Here is where I enter any quick note that comes to mind that I might want to refer to later. My QuickNotes section has literally thousands of quick notes I've made over the years. Each is indexed and retrievable at any time. This has been profoundly invaluable to me over the years.

OneNote is not itself encrypted, but I keep it in cloud OneDrive which is itself encrypted using AES 256-bit encryption.

My C: Drive is encrypted using BitLocker AES 256-bit encryption.

You got it. Navigate to where you want and just start typing. You can also drag and drop anything, text, a picture, URL, sound bite, etc. And when you leave or close, it is automatically saved.

@Edwin, OneNote isn't complicated to use and works quite intuitively. I've created and used mainly one Notebook in the last 20 years. In that Notebook I create new Sections whenever I want and in a new Section I create as many pages as I want. Some of my Sections have a large number of pages. Everything works just as if you are working with a paper notebook.

I keep stuff like when I'm measuring a window on my back porch, I put the measurements in a quick note. If somebody I'm talking to makes reference to something I want to remember, I put it in a quick note, you get the idea. If you have an eidetic memory, you may not need notes. I need to make and use notes all the time.

A week later when I'm at Home Depot and I need the measurements of that window on my back porch, I pull out my phone, open OneNote, in search ask for "Back Porch Window" and I've got the measurements right there!
