OS
windows 11 64
I have reset this to not update other MS products. Specifically I don't want to update MS Office. I have disabled updates within office on the account screen yet Windows 11 keeps resetting itself to update other MS products. Any thoughts or prior experience ?

I have disabled it repeatedly and it keeps enabling itself over and over.

I bet you its Edge - even though I don't use it.

Does the disable function in Office override the OS updates ?

Probably all Office updates are disabled, the "other" refers to other Microsoft applications, such as Microsoft Edge, Microsoft Store apps, dotNET components, OneDrive, Skype etc. Anything not a Windows component or related to Office. I wouldn't worry. I have disabled my Office updates and never had any issue with Office, never seen any Office updates in the Windows Update list.

I've never had Office decide to update on its own with updates turned off on the Product Information screen either. I rely on Office 2021 LTSC heavily and I don't appreciate failed updates. I was just surprised to see that slide bar enabled under updates. Thanks for replying.
