Any ideas on why this is happening?

First stage within the OS?
Second Stage after restart?
Third & final stage past BIOS/HAL?

It can take a long time - it took a long time when I went to release version to Dev. If it is more than 1 hour, it may be an issue but everybody's time can differ for lots of reasons.

Might it have to do with my PC not being CPU non compatible?
