When starting Windows 11, a blue screen appears, to be precise, it appears immediately after loading the UEFI.

After I restored the backup that was several months old, nothing happened, but after all overdue updates from the months after the backup have been installed, the blue screen is shown. The message of this blue screen from the Windows log is as follows:

Description: The system has restarted without properly shutting down first. This error is possible caused by the system becoming unresponsive, frozen, or losing power fallen out.

From what you describe, you're all good until WU runs. More than likely WU is installing an incorrect or corrupted driver.
Along with the logs for zbook's analysis, after the image is restored this time. I suggest this.

1. immediately disconnect from the internet.
2. go to settings>windows update>pause updates
3. reconnect to internet
4. disable including drivers with windows update using this tutorial. If running Home use option 2 (regedit method)..
If using Pro, use option 1 (group policy method)
5. re-enable windows updates
