If you want it darker (or to match a theme being used in Windows) select "Use system setting" in Office and make sure to change the other apps setting in Windows Settings as described above.
System settings fine, but what exactly you imply by other app settings? Like VLC, Brave, 7 zip etc. in dark? Is that possible?
