Legally speaking, they can strip away whatever features they want if their product is still fit for its purpose, and the majority still keeps on consuming. All businesses build goodwill during their early years, cash in on it and when they've made a comfortable niche for themselves, slowly start cutting down quality and features that made them popular among the masses. "Cost efficiency" is the name of this game. It sounds like you are confusing what should be with what is, and underestimating people's ability to adapt to adversities like MS accounts. I would like to see these repercussions as much as you, but I'm a realist so I'm planning on how to adapt to things I've no control over.
MS makes a ton more money from advertising if they have users connected to the internet with Microsoft Accounts. I guarantee that is what is driving the required internet and attempting to require a MS Account for Windows 10 Home is all about. And, again, my feeling is if you don't like Microsoft's policy, there is nothing forcing you to use Windows, there are alternatives.
