Most of the time I get Security Intelligence Updates when checking. I'm currently at:

Have you tried to update manually?
If it doesn't update the first time you try, keep doing it
it will update after a few tries. pretty fickle.

I suggest you double-check your Defender update history by looking in Event viewer
Applications and services logs,
Microsoft,
Windows,
Windows Defender,
Operational,
EventID 2000,2001
2000 is a successful update
2001 is an error in updating
[both events are habitually logged twice at each occurrence]
