This situation started when Windows Update offered a new firmware driver that would not install and every time the laptop was rebooted without external power there would be a "Plug in power and press F1 to continue" at boot. I finally gave up after trying to roll the drive back with no success and restored an image. After that I ran windowshide.cab and hid the update and then downloaded the driver from Dell and installed it. I then unhid the driver and checked Windows Update and the driver was available, so I hid it again. Here is the issue, I checked Device Manager and it showed the old driver while System Information shows the new driver - apparently Device Manager only gets updated when drivers are installed through MS.

I always manually flash the BIOS.

That Firmware entry has been discussed but not resolved for years.

I have never found a convincing / understanable explanation of exactly what the Device manager, Firmware entry is.

The Windows Device Manager Firmware entry will not change if you installed the firmware update manually from a downloaded file.
The Windows Include Drivers with Windows Updates option must be enabled and the firmware must be uploaded and installed from Windows Update for it to show the correct firmware in Device Manager.

In the BIOS, disable the option that says "UEFI Capsule Firmware Updates" which disables the update BIOS over UEFI and it should fix the problem and you would not need to hide anything. The Device Manager version can be the same or older than the actual BIOS because the Device Manager is updated by Windows Update only and unrelated to the actual BIOS you flash.

The Device Manager version can be the same or older than the actual BIOS because the Device Manager is updated by Windows Update only and unrelated to the actual BIOS you flash.
That was the issue that the OP wanted corrected. Some posters actually thought that the firmware version shown in the Device Manager > Firmware is independent from the actual BIOS version that was flashed when in fact they should be the same if done through the proper procedure.

DELL, HP, Lenovo, etc., use proprietary software and hardware.
You can't assume it's going to behave the way a home built PC will behave.

The parts we use for home built PCs have long been standardized.

Companies like DELL, HP, Lenovo, etc., do the exact opposite, on purpose.
This forces you to buy replacement parts from them (in most cases).

It depends as in the case of the Dell XPS 15 9570, the Device Manager > Firmware will show 1.26.0 as the latest while the latest BIOS itself is 1.27.0 so it might be the same or not, depending more on if there is a matching version for Device Manager or not.

I don't have this device in my Device Manager, probably because I have an unsupported Legacy BIOS installation, not UEFI. But since you successfully updated the UEFI firmware and you have no issues, I would not worry. Also restart your computer and press F2 to enter UEFI Firmware. Confirm you have the newest version there. You can also use a utility such as Speccy or Aida64 to confirm the version. In Aida64, go to Computer, DMI, BIOS to see the version.

I don't either anymore. I know I used to and not sure if it was disabling the UEFI Capsule Firmware Updates or if it's the in-place repair install that got rid of it.
