Just updated to latest current channel Office 2021 and something happened to my Excel program. It is opening full screen and when I click on the 'window' button it goes full minimize. If I try to drag the program anywhere it falls into minimize, a small window with the controls only showing.
I restarted PC, no help. Ran SFC nothing found, ran DISM and all checks out. I checked the program 'properties' and it show start in Normal Window

EDIT:
Did a restore back to the 19th and Excel seems to be working again OK. Guess I will hold off on the latest office update for now.

I asked that well known know-it-all called CoPilot and it reckons:

Yes! Excel does support a fully black theme for its interface. You can enable it by going to File > Account > Office Theme and selecting Black. This will make the ribbon, menus, and background dark.

However, the spreadsheet itself will still have white cells. To make the entire sheet dark, you can:
  1. Change the fill color of all cells to black and adjust the font color to white.
  2. Use Dark Mode in newer versions of Excel, which darkens the entire sheet, including cells.
