Office 365 Upgrade Woes

I just upgraded unsupported Office 2016 on my HP laptop to Office 365 provided free from my local school where I am a governor. My personal MS account has two Office 2021 licence keys. I had to delete all Office credentials and install Office 365 in a local account using my school MS account to prevent the installer using the Office 2021 licence keys on my MS personal account. Why does MS make such installations so difficult?

Cause...

1. Office 20xx is non-subscription
2. Office 365 is subscription

Is the Office 365 part of the Shared Subscription thing?
Perhaps that's one of it's stipulations.

I also noticed I now have wrong genic icons like this for Excel but the file association is correct. How to fix?
