You've probably done this already, but have you tried using either Display Driver Uninstaller (DDU) or the AMD Cleanup Utiliy from safe mode to wipe out all the old AMD GPU drivers/software and then reinstall the correct ones for the RX 7900 XTX?

I do think the best way forward is for you follow the instructions from @zbook so he can hopefully find what is causing the issues.

If "shuts down" means that the screen goes blank while the computer is running, this can be caused by low virtual memory. Open a command prompt, type or paste
"wevtutil qe System /count:1 /rd:true /format:text /q:"Event[System[(EventID=2004)]]"
into it and press "Enter". If the system recently ran short of virtual memory, you should see the date and time of the last occurrence and the three applications using the most memory at the time.

PC shutting down while gaming ... to me sounds less than a driver issue and more like an overheating problem or faulty PSU.

When last was the PC opened and cleaned inside ... like blow out dust ?
Try find a PSU rail/load tester.
