Did you try just deleting them? You wont delete that apps, just shortcuts
I've seen numerous posts that say you can go back to the old start menu with vivetool
I've never used it and my start menu has never changed on either of my computers

Go to settings>personalization>start and toggle off the items you do not want. On the start menu itself click the down arrow and set it to list. It should then look like it did before EXCEPT the list shows rather than you having to select 'all apps' like you did before to see the list.
FYI MS does not need your permission to make changes. The OS belongs to MS, not us users. Luckily, MOST of the changes can be reversed thru settings or the registry or if you want to use 3rd party apps. Otherwise, we are at the mercy of MS and have to learn to adapt. Change is inevitable.

Maybe THIS is why I never saw the new Start menu (?) . . . I turned them all off so I only see what I've pinned to Start
I have no way of knowing unless someone tells me how to check if I have the new Start Menu feature but I do have some icons flagged as SYSTEM so I thinks that's the clue.
It does not matter if I have More Pins selected or Default as it's the same results either way.

I have 25H2 (26200.6584) but my other PC looks exactly the same with 25H2 (26200.7840)
I like it just the way it is so I hope it never has to change.
But I really mostly just use Ctrl/Esc and star typing the name of the app I want which is often just one letter like F then Enter for Firefox or AU for Autocad

It doesn't matter what version of Windows 11 you're on.
I'm on the latest stable Win 11, but I still have the old Start Menu.
Generally... the new Start Menu comes with 25H2.
But as usual MS is not rolling it out to everyone at the same time.
MS thinks it's "less" confusing that way.

Because those anti seizure medications i have to take daily really really numb weaken the mind focus during the morning (especially when you aren't doing the supermarket job weekends)

I usually binge watch youtube videos but not the swiping types on a phone.
Still weighing a few ideas, i once had to use a program called ClassicShell that would override how the start menu would work in Windows 8 from the desktop mode instead of the Metro screen when the windows button was pressed.

I wonder if Windows 11 Home has been out long enough for someone has developed a theme that simply overrides the menu by forcing a custom start menu theme making it resistant to new windows updates like ClassicShell was ?

Yes, it's at the end of the video. I saved a shortcut to it in case I need it myself in the near future. It does not name them all but one of those shell type apps might be the only option if MS eventually breaks this fix as he mentions in the video
