Should I stop the updates? Why would Windows want to install older drivers? This is aggravating...everything is working just fine on this laptop. I went through a lot of headache a month ago with BSOD's and finally went to Intel and AMD's websites directly to update drivers and the BSOD's disappeared.

Let it finish updating the Realtek drivers. If you have problems with them you can always roll them back. Your call if you want to update them further using MUC. I use it for updating my Realtek audio and software component drivers on 4 computers. No problems with them.
For updating Intel's graphic, wireless, bluetooth, and chipset drivers I use Intel's Driver & Support Assistant. Intel® Driver & Support Assistant
For updating my Realtek LAN drivers I go here: Realtek PCIe FE / GBE / 2.5G / Gaming Ethernet Family Controller Software - REALTEK
For AMD drivers here: https://www.amd.com/en/support

You have to choose whether to get them from Raeltek or use Windows Update, It really doesn't matter if they are a bit out of date as long as everything is working and doing what you need it to do. I use Windows Update except for Intel and Nvidia stuff as I have the tray icons from Intel Driver Support Assistant

Sorry @Devlin1888 I meant Realtek, I was having a senior moment, doing too many things at once. However, Intel do update them from the Tray assistant

Not at all, I had a look on intels site incase i was missing something, Thought maybe they did like a package or something for a specific reason but its all good! I never touch realtek stuff once ive got it going, The infinite loop of uninstall and restart to install the new version repeating forever has happened to me one too many times hahaha

Well gents, there still sitting at Windows Update, what 5 days or so later? Still says "Pending" on all of them. Like I said, a few months back, this machine was getting sometimes 3 BSOD a day, and for the last month or so, all is working well after I went to Intel and AMD websites to update drivers directly.

Should I use wushowhide (Windows show or hide updates) to try and stop them? This machine is running like a top now and dont want to go through what I did with those horrible BSOD's again.

You can always make an image of your OS before installing them; you will then be able to restore it if things go awry.

Or Windows Update installed them. Open Control Panel, Device Manager, expand Sound, video, and game controllers, click on Properties, Driver. If the Driver version is 6.0.9301.1 then it has been updated.

Windows did update your Realtek drivers to 6.0.9301.1. The Realtek audio drivers control your laptop speakers sound and on a desktop computer the desktop speakers sound. The AMD audio drivers control the sound over an HDMI cable, i.e., to a TV from an HTPC. You can verify your default audio device by opening Control Panel and Sound.
The AMD audio drivers are loaded with the AMD graphics drivers package.
