Hey so as stated in my title, I wanted to uninstall Nvidia High Definition Audio, so I went ahead and removed it. As expected that left me with the basic Windows High Def Audio driver. I went to my MOBO drivers page and downloaded RealTek, but whenever I have run the installer it doesn't change the default driver. It installed the RealTek Audio Console, which does not work, but I still see "High Definition Audio Device" when checking device manager.

Version 25H2

Nvidia High Definition Audio would be related to the video card not the motherboard onboard sound.

I installed new Nvidia drivers for the HD audio driver, and it has just replaced my basic windows audio driver. Does that mean my Mobo has no available on board drivers now?

You could try is extracting the Realtek Drivers to a folder.
Go to Device Manager, Right Click on the Sound Device, Select the Driver Tab and Update Driver.
Select Browse my computer for drivers, and navigate to the folder where you extracted the driver files.
If you are running Windows 11 64 Bit there will be a Win64 folder inside the extracted files.
Select the Win64 folder and the driver should update.

The Nvidia is probably being seen as the Default Sound Device.

Only thing is that with the Nvidia High Def audio installed I have no default windows audio driver. Any idea on what could be going on? I also only get audio through my Aux speaker when plugged into my monitor, but not when plugged directly into the mobo

From your monitor would be the NVIDIA card through the display port/HDMI cable.

What are all the devices listed under setting > sound > all sound devices

Also what port are you using on the back of the motherboard?

You want the middle port.

Go into Device Manager /View /Show hidden devices and have a look in Sound Controllers.
Is the Realtek still listed?
If not go to Right Click on Sound Controllers and Scan for Hardware Changes.
If you cannot see the Realtek Device reboot and see what happens.

Your computer has 2 sound controllers. You should have active drivers installed for both of them.

Intel Display Audio transmits audio through HDMI or DisplayPort cables from your computer to a monitor or TV. It is a component of your Intel graphics driver. This driver normally is installed as part of your graphics driver, but also make sure the latest chipset driver is installed.

Realtek Audio transmits audio from your motherboard's analog audio (like the 3.5mm jack to external speakers) which uses drivers like Realtek and installed as a separate installation package..

Once installed you choose which which sound controller the computer uses from settings>system>sound.

Only thing is that with the Nvidia High Def audio installed I have no default windows audio driver.
That is normal. It replaces the Windows driver.

Install the Realtek Audio drivers as supplied by the MOBO Manufacturer.

The Nvidia HD Audio is an additional driver component for Nvidia Graphics Cards/Chipsets, not a replacement driver, leave it be. Driver is a component part of the Nvidia graphics driver install.

Only thing is that with the Nvidia High Def audio installed I have no default windows audio driver. Any idea on what could be going on? I also only get audio through my Aux speaker when plugged into my monitor, but not when plugged directly into the mobo
That is simply because you have not installed the Realtek Audio drivers. Also that's why the Realtek Audio Console does not work.

Other drivers are involved as well, possibly Intel SST(Smart Sound technology) this is found under Device Manager > System devices.

All the drivers are on the MSI MOBO support website.

Important to match your exact Mobo Realtek sound config with the correct Realtek driver, as per Mokichu latest advice on this site .
Do a complete Uninstall /reinstall as advised , to clear all existing Nvidia content
